Mixed Vegetable Porridge

I use this recipe - or a version of it - nearly everyday....

It's great for kids and adults alike who don't like to eat veg...

Needed:

water

2 large potatoes unpeeled and cut into small cubes

3 handfuls of frozen mixed veg (include lots of broccoli and cauliflower)

4 or 5 frozen cubes of spinage

2 cubes of veg bouillon (buy from a health shop one with very low or no salt)

2 teaspoons of curry powder

2 teaspoons of herbal salt from a health shop (actually contains very little salt and lots of herbs)

a blender

Let's cook it up

Put all the seasoning into a saucepan with the potatoe cubes and water and boil.

When the potatoe cubes are soft add all the veg and let the whole thing come to a boil.

Now,  get out your blender and blend until your soup turns into a porridge.

If it's too thick add some water and eat!...

There you go!
